This is essentially what a hundred years of nutritional science; and 610,000 records on CAB Abstracts boil down to, according to journalist and author, Michael Pollan, in his latest book, In Defense of Food: An Eater's Manifesto. While I by no means agree with everything that he says in this interview with Terrence McNally on AlterNet, overall he gives a good overview of what the science of food and nutrition means to the modern consumer; and attacks over-processed, highly packaged foods as 'not food. It's merely foodlike'; and eve offers some useful hints about things consumers can do to take back control of their own relationship with food and nutrition. I don't think you even need to read his book, the interview is a good read in its own right.
